Smoky Kiwi Campfire Kumara Soup
Packed with earthy flavours and a subtle smoky kick, this kumara (sweet potato) soup is a staple for chilly nights under the stars.
INGREDIENTS
2 medium kumara, peeled and chopped
1 small onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp ground cumin
3 cups vegetable or chicken broth
½ cup coconut milk
1 tbsp olive oil
Salt and pepper to taste
DIRECTIONS
1. Heat olive oil in a pot over medium heat. Add onion and garlic, cooking until fragrant.
2. Stir in smoked paprika, cumin, and kumara. Cook for 2 minutes.
3. Add broth and simmer until kumara is soft (about 15 minutes).
4. Blend until smooth, then stir in coconut milk. Season to taste.

Hearty Hiker’s Lamb & Barley Stew

INGREDIENTS
200g lamb shoulder, diced
½ cup pearl barley
1 small carrot, diced
1 small potato, diced
½ small onion, diced
2 cups beef or vegetable stock
½ tsp dried thyme
½ tsp black pepper
Salt to taste
DIRECTIONS
1. In a pot, brown the lamb over medium heat. Remove and set aside.
2. In the same pot, sauté onion, carrot, and potato for a few minutes.
3. Return the lamb, add barley, thyme, and stock. Simmer for 45 minutes, stirring occasionally.

250g fresh New Zealand green-lipped mussels, cleaned
1 cup corn kernels (fresh or frozen)
1 small potato, diced
½ small onion, diced
2 cups fish or vegetable stock
½ cup cream
1 tbsp butter
Salt and pepper to taste
DIRECTIONS
1. Steam mussels until they open, then remove from shells and chop.
2. In a pot, sauté onion in butter until soft. Add potato, corn, and stock. Simmer until potato is tender.
3. Stir in mussels and cream, seasoning to taste.
